I Basically Cut Out Carbs for a Week {And Here’s What Happened}

Welcome to my reduced carb adventure. Please enjoy as I suffer and learn from me and my mistakes.

Day One: Monday

Breakfast: Trader Joes Greek Yogurt (Mango), Handful of Blueberries, Handful of Raspberries, Handful of Granola

I stopped and picked up a “Sun Cooler” from a local café. It has green and mint tea, lemonade and a touch of peach nectar. Served on ice with a fresh lemon!

Lunch: “Taco” Salad {Romaine lettuce and spinach, tomatoes, cucumbers, red pepper, yellow onion, black beans, 1/4 breast of BBQ chicken, Mexican blend cheddar cheese, top with Annie’s Balsamic Dressing and Ranch. If you want a little crunch cheat a little and add 3-4 crushed up tortilla chips )

Snack: Clementine

Dinner: Zucchini Noodles “Zoodles”, with sautéed spinach and tomatoes with Trader Joes creamy tomato basil sauce.

Ending: Left with cravings, but the zoodles did help solve some of those.

Day Two: Tuesday

Breakfast: Trader Joes Greek Yogurt (Coconut), Handful of Blueberries, Handful of Raspberries, Handful of Granola

Snack: Clemintine

Lunch: “Taco” Salad {Romaine lettuce and spinach, tomatoes, cucumbers, red pepper, yellow onion, Mexican blend cheddar cheese, top with Annie’s Balsamic Dressing and Ranch. If you want a little crunch cheat a little and add 3-4 crushed up tortilla chips ) I forget my separate Tupperware with the chicken and black beans so no protein for me 😳 I also stopped and got a latte with skim milk!

Snack: Handful of peanuts (only snack in my house that wasn’t carbs or a clementine hahah

Dinner: Buff Chick wrap at a cute little diner with only a handful of fries (Everyone gets a cheat meal)

Ending: Feeling like I shouldn’t have eaten the Buff chick wrap but not really regretting anything. I have been eating salad.

Day Three: Wednesday

Breakfast: Trader Joes Greek Yogurt (Strawberry), Handful of Blueberries, Handful of Raspberries, Handful of Granola

Stopped in to get another “Sun Cooler”!

Lunch: “Taco” Salad {Romaine lettuce and spinach, tomatoes, cucumbers, red pepper, yellow onion, Mexican blend cheddar cheese, top with Annie’s Balsamic Dressing and Ranch. (I did not add tortilla chips today!

Snack: Clemintine (I just love clementines 🍊)

Dinner: Veggie Burger (Trader Joes black bean and corn YUM!) with spinach, sautéed onions and a little BBQ sauce (also Trader Joes)

Ending: Feeling pretty well and weighing in lower than usual. I think I have some water weight, but overall not too bad.

Day Four: Thursday

Breakfast: Greek Yogurt and granola!

Lunch: Starbucks!

Dinner: Meatless Ground Beef with salsa, corn, beans a little sour cream

Ending: I had a job interview and felt pretty great! I felt great in my business casual and overall not cravings that day.

Day Five: Fri-YAY

Breakfast: Clementine

Lunch: Canned Tuna with onions, spinach and a little ranch for creaminess

Snack: A handful of Trader Joe’s roasted chickpeas

Dinner: York Street Noodle House’s Shrimp Dumpling Soup with loads of bok-choy! This came with rice noodles and cut down my proportion so I did not eat them all. I also only ate half saving the rest for lunch the next day!

Ending: Went tanning today and felt pretty great in my extra cheeky bikini. Probably could have looked better, but felt great either way. I tried to not eat a whole lot of noodle house due to the carbs in the pasta, but i focused not he veggies and broth and tried to not eat all the noodles.

Day Six: Saturday {Almost Done}

Breakfast: Blueberry Greek Yogurt and Granola

Lunch: Left over Noodle House (maybe be doing this diet but also balling on a budget)

Dinner: I made Trader Joe’s Beefless Ground Beef {with salsa, black beans, corn, red bell peppers, yellow onions, and a dollop of sour cream} This stuff was killer, let me tell you! I highly suggest it and you don’t feel super gross or greasy after eating it!

Day Seven {LAST DAY LETS GO}

Breakfast: Yogurt and granola!

Lunch: Yummy salad with cucumbers, tomatoes, chickpeas, baked chicken, cheese, onions, bell peppers and a balsamic dressing.

Dinner: More Trader Joe’s Beefless Ground Beef { I used less ground beef and less black beans this time and increased all the veggies I used the night before} This time I also added Guac {single-serve packets} and ate it with a whole wheat tortilla.

Ending: I felt like I cheated a little, but overall still felt good. Was super tired but it might of just been work and a lot of heat/ sun. I also did not drink as much today, as I did all the other days.

So this week was both challenging and inspiring. It was hard learning what has tons of carbs in it, originally I just tried to cut out pasta, rice, potatoes and that kind of stuff, but then once I stated inputting everything I was eating into My Fitness Pal, I saw the amount of carbs that are in other veggies that are super healthy for you. Like black beans and spinach are loaded with carbs! I did not know that until after I ate them, I just thought they were protein and super healthy for me! One huge thing I took away from this is that clean eating, while I didn’t loose a lot of weight, I felt better. I felt more full off of smaller amounts and I felt less disgusted after I ate. I also found foods that I love that don’t require heavy carbs to enjoy, where before I loved to have carbs with every meal as in rice and potatoes. It’s also great seeing the different substitutes you can use. Cauliflower rice {still haven’t tried} and zucchini noodles {zoodles} are great when you just want something to mix with that isn’t actually rice or pasta, like if you want chicken and marinara or fried rice, you can use those things instead of all those carbs. And while I’m not saying to cut them all out all the time, I just think there is a time and a place and every day with every meal isn’t it.
