Who Would Have Guessed, I Love Coffee?

Looking back to High School Freshman Marina, she hated coffee. She hated everything about it. From the smell to the bitter taste, it just wasn’t her cup of tea {ha, get it}. But then High School Junior and Senior Year Marina, well she started to get a liking for it. She stopped almost every day on the way to school for an iced milky way. If you don’t know what that is {if you’re not from Nantucket, you probably don’t}, it is basically a iced mocha coffee that has slim to none coffee taste, but still gives you the beautiful caffeine rush.

Looking to today, I would never order that stuff as I actually like the taste of coffee and I try to stay away from overly sweetened things. Today I have set drinks that I order when I don’t know what to order. My typical drink anywhere I go is a Vanilla Latte with skim milk. This could be iced or hot {and yes, I am one of those weird coffee drinkers that don’t just stick to one or the other and switch with the seasons}.

When I go to Starbucks, I order an iced Caramel Macchiato with coconut milk or a hot Vanilla Latte. When I’m at home, I stick to the Vanilla Latte, iced and hot. If you’re not into coffee {or just not in the mood}, get a Very Berry Hibiscus Refresher. With this, I add a splash of Lemonade or if I’m home a lemon slice.

My orders aren’t super complicated. They’re simple and now I know, not so hard to make. I really hope to find some cool recipes while I work at Starbucks and maybe even create a few {Barista’s have been known to do that}. I know there is one called something like the Flu Buster and tried and approved. It is citruses and lemony and you can even add peppermint if the store has it. Starbucks is just full of surprises.

I think coffee is a way of life really. My Mom lived off of coffee {dark roast with whole milk and sugar or a double shot macchiato all foam}.  I never saw her without coffee with her or on her {don’t worry I get that messy gene from both my parents}. My Dad loves coffee as well {black dark roast}. My sister is obsessed with her iced hazelnut with cream and sugar. And all my friends {and Phi Sig Fam} even say yes whenever I ask if they want to come on a coffee run. Coffee is a way of life, it’s a bonding experience and it’s a hot sip on a cold day. Does anyone else remember their first taste of coffee where you swore you’d never be like your parents and drink something so bitter? Don’t worry we almost all grew out of that stage in time. Coffee dates have made me some of my best friends and only leaves me with fond memories.

Happy Pineapple Day

Today is an amazing day! It is national pineapple day and I think that means it’s a great day to celebrate. Make a drink in a pineapple, make a pineapple smoothie, watch a movie you think is pineapple related, hey, even try some pineapple wine!

Really, today is just a day to get your tropic on. Have some pineapple and get the show on the road.

I spent this weekend in Nantucket celebrating my best friend’s 21st birthday and oh my, it was a long, fun filled weekend. I had a lot of lack of sleep and am still recovering. I think some fresh pineapple is definitely what I need to keep me going this week!

I Basically Cut Out Carbs for a Week {And Here’s What Happened}

Welcome to my reduced carb adventure. Please enjoy as I suffer and learn from me and my mistakes.

Day One: Monday

Breakfast: Trader Joes Greek Yogurt (Mango), Handful of Blueberries, Handful of Raspberries, Handful of Granola

I stopped and picked up a “Sun Cooler” from a local café. It has green and mint tea, lemonade and a touch of peach nectar. Served on ice with a fresh lemon!

Lunch: “Taco” Salad {Romaine lettuce and spinach, tomatoes, cucumbers, red pepper, yellow onion, black beans, 1/4 breast of BBQ chicken, Mexican blend cheddar cheese, top with Annie’s Balsamic Dressing and Ranch. Meal Prep {the How-To and the Why}

So, I have decided to start doing that magical thing called meal prep. I’m not planning on having these meals every single day, but I have decided that it is a step in the right direction. If you do it right, you can save money and eat healthier.

My main ingredients will consist of

  1. Brown Rice
  2. Chicken
  3. Tomatoes
  4. Broccoli
  5. Asparagus/Green Beans (whatever is on sale)
  6. Spinach

Of course, I will use other ingredients but these will be the main focus.

Im planning on roasting a a bunch of veggies for two nights with chicken and brown rice. This can be easily reheated and good to eat the first night of making.

Then using the chicken, tomatoes, spinach and layering with black beans, corn and my avocado cilantro dressing in a mason jar for another two days

For snacks, I can eat the broccoli and tomatoes with ranch dressing.

Lunch some days I can use the spinach and tomatoes with chicken and dressing for a salad or even eat the roasted veggies and brown rice with fresh spinach.

The goal of this is to save me money and to make sure I don’t go all day without eating or eating a sandwich for lunch when I know I should be eating vegetables.

How to Eat Healthy When You’re On the Go

I know, as a college student, I tend to always be on the go. Wether I am going to class, doing errands or going to some meeting, I don’t always have time to eat healthy… well, that’s at least what I thought until now.

Avgolemono Greek Soup

Happy new year everyone! I know, “New Year, New Me” right? Well, I think that it is the perfect excuse for to start a happier and healthier lifestyle. I have decided I was going to work hard to be better, for myself and for those around me. If you check out my last post {here} you’ll see all my new year’s resolutions. Anyway, I have been trying to discover some fun and healthy recipes to ring in the new year with, so keep an eye out for some of those!


This is my all time favorite soup that has ever existed! I have made it on countless occasions and couldn’t be more thankful to my Aunt Annie for sharing this recipe with me! I hope you enjoy it as much as I do.



1/2 cup chopped carrots
1/2 cup chopped celery
1/2 cup chopped scallion (or green onion) About 2 tbl oil
Salt and Pepper
4 cups chicken stock (I used college inn) 1/2 cup orzo
2 eggs
1 lemon, juiced
Handful chopped spinach (optional)


  1. Heat up the olive oil in a sauté pan
  2. Add the carrots, celery and scallions and cook until tender
  3. Season with salt and pepper as needed
  4. Add the chicken stock and bring to a boil
  5. Once it is at a boil, add the orzo
  6. Simmer until the orzo is cooked, then turn the heat to low.
  7. In a separate boil, beat two eggs with the juice of a whole lemon.
  8. Let the soup stop boiling and cool down just a little bit (This is the important thing I learned over time to keep the egg from cooking)
  9. Ladle the soup into the egg/ lemon mixture and stir continuously. (I usually ladle quite a bit to help the egg from cooking)
  10. Next slowly pour egg/lemon/soup mixture back into the sauté pan and stir continuously.
  11. Salt and pepper to taste once again.
  12. {Optional} Add chopped spinach, salt and pepper again
  13. Serve and Enjoy

Tip: I play around with this recipe a lot. I sometimes add more lemon and sometimes add more orzo. I also love to serve with sliced ciabatta bread/ rolls.
